Cinnamon Bun French Toast Dairy Free

This Cinnamon Bun French Toast is a delicious dairy-free twist on a classic breakfast favourite, combining the traditional French toast with the warmth of a freshly baked cinnamon bun. Made with homemade cinnamon swirl bread, each slice is perfectly spiced – the perfect addition to your morning routine.

It”s true that cinnamon buns are known for requiring time and patience, but the effort is well worth it and this recipe is no exception. The cinnamon swirl bread can be prepared ahead of time, making it easy to assemble a special breakfast the next morning. Finished with a generous drizzle of Sweet Ontario maple syrup, this recipe is a classic Canadian staple.

Ingredients
  • 3 large eggs
  • 1 cup coconut milk (Can substitute with whole milk, oat milk or almond milk)
  • 2 tbsp granulated sugar
  • 1 ½ tsp pure vanilla extract
  • ¾ tsp ground cinnamon
  • ¾ tsp salt
  • 6 slices of Cinnamon Swirl Bread (see instructions below)
  • Unsalted butter and/or neutral oil for coking
  • Sweet Ontario maple syrup, for serving.
Directions
  1. In a large, wide bowl or plate with a thick edge, whisk eggs to blend. Whisk in milk, granulated sugar, vanilla, cinnamon and salt until combined.
  2. Add bread slices to egg mixture and let soak, until bread is saturated. Using a fork, flip bread and soak the other side
  3. Heat butter and/or oil until butter starts to bubble. Add soaked bread and cook until golden brown and crisp on both sides (about 3 minutes per side).
  4. Repeat until all the French toast is made. You can keep the French toast warm by placing it in the oven that is preheated to 200 degrees Fahrenheit.
  5. Serve with butter, berries of choice and Ontario maple syrup.

Cinnamon Swirl Bread

Ingredients
  • 1 1/8 tsp yeast
  • ½ cup warm water
  • 2 cups all-purpose flour
  • 1 large egg
  • 2 ½ tbsp oil (light in flavour such as olive oil or vegetable oil)
  • 2 tbsp sugar
  • ½ tsp salt
  • Cinnamon Mix
    • ¼ cup sugar
    • 1 tsp cinnamon
Directions
  1. Add yeast and warm water into a bowl and let proof for 5-10 minutes.
  2. Add the rest of the ingredients into a bowl.
  3. Mix dough by hand or by using the stand mixture with a dough hook.
  4. Knead dough for about 10 minutes or until it feels smooth and elastic, but still a little tacky. You may need to add extra flour or water to get the right consistency.
  5. Grease a bowl and let the dough rise, covered in a damp cloth, for 1 hour or until doubled in size.
  6. On a lightly floured surface roll out dough to fit your loaf pan (about 7×20”).
  7. Mix cinnamon and sugar together and spread out evenly over the dough.
  8. Tightly roll the dough up and place into greased bread loaf pan.
  9. Cover with a damp cloth and let rise for 1 hour or until doubled in size.
  10. Preheat oven to 350 degrees Fahrenheit.
  11. Bake for 20-25 minutes or until golden brown.
  12. Let cool in pan for 15 minutes and then remove.
