Fall is pumpkin harvest time! Whether you are baking up a pumpkin pie or loaf or carving for a spooky addition to your front step, don’t throw away those seeds! Pumpkin seeds are packed with nutrition and they taste good too, especially when sweetened with Sweet Ontario maple syrup.
Ingredients
- 1 cup pumpkin seeds
- 1 tbsp cooking oil
- 1.5 tbsp Sweet Ontario maple syrup
- Salt to taste
- Selected seasonings (options: cayenne, cinnamon etc.)
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Spread parchment paper on a baking sheet.
- In a mixing bowl, combine pumpkin seeds, oil (we used olive oil), maple syrup, salt and any seasonings you will be using.
- Spread the seed mixture on the baking sheet and place in oven.
- Bake for 20 to 30 minutes, checking every 10 minutes to ensure they are not burning (the maple syrup will caramelize a little bit which is not a problem).
- Remove and let cool. Enjoy!
- These seeds can be stored in a mason jar, storage container or plastic baggie to keep them fresh.
