Maple Honeycomb

Maple honeycomb fans will fall in love with this recipe, combining the classic crunchy texture of honeycomb with a hint of Sweet Ontario maple flavor. Making honeycomb is almost a science, and the secret to its airy, crisp texture lies in a simple pantry staple: baking soda.

Enjoy this treat on its own, dip it in chocolate, or crumble it over desserts for an extra touch of sweetness. It’s an easy and delicious way to enjoy Canada’s iconic sweetener. 

Ingredients

  • 1 – 1/4 cups sugar
  • 1/2 cup Sweet Ontario maple syrup
  • 1 tbsp baking soda
  • 1 tsp flaky sea salt

Directions

  1. Line a baking sheet or pan with greased parchment paper.
  2. Combine the sugar, maple syrup, and 1/4 cup cold water in a medium heavy saucepan. 
  3. Heat, stirring, until the sugar dissolves. From here, don’t stir! Instead, swirl the pot occasionally as the mixture comes to a boil until a candy thermometer registers nearly 300 degrees Fahrenheit (between five and seven minutes).
  4. Quickly remove the pot from the heat and whisk in the baking soda. Immediately pour the mixture onto the baking sheet and scrape the pot with a spatula. Don’t smooth the mixture or you will get rid of the air bubbles!
  5. Sprinkle the surface of the candy with the flaky sea salt.
  6. Let the mixture cool.
  7. When cool and hard, break the honeycomb apart into chunks with your fingers.
  8. Enjoy!
