Crisp apples, crunchy cabbage, tart cranberries and sweet maple syrup come together in this fresh and colourful slaw. It’s an easy side dish for family dinners, fall gatherings or your next backyard barbecue. Make sure you use #SweetOntario maple syrup to bring out the best of this flavour combination.
Ingredients
For the slaw
- 6 cups cabbage, shredded
- 1 cup grated carrot, or to taste
- 1 cup sweet apple, cut into thin, bite-sized slices (you can also shred it if you prefer it finer)
- 1/4 cup dried, sweetened cranberries
- Sliced green onions
For the maple vinaigrette
- 1 tbsp minced garlic
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 3 tbsp apple cider vinegar
- 2 tbsp Sweet Ontario maple syrup
- 1/2 cup olive oil
- Salt and pepper, to taste
Directions
- Add the garlic, Dijon mustard, lemon juice, apple cider vinegar, maple syrup, salt and pepper to a small bowl or mason jar.
- Pour in the olive oil. Whisk until well combined, or secure the lid on the jar and shake until the dressing is blended. Taste and adjust the seasoning as needed.
- Place the coleslaw mix, apple slices, almonds and dried cranberries in a large bowl. Toss gently to combine.
- Pour approximately half of the maple vinaigrette over the slaw and toss until everything is lightly coated. Add more dressing as desired.
- Garnish with sliced green onions and serve.
Store any remaining vinaigrette in the refrigerator for another salad or to drizzle over roasted vegetables. Enjoy!
