Baked Noodle Bowl with Hint of Maple

If you’re looking for a quick and easy meal that won’t make a mess in the kitchen, this is the one for you! This noodle bowl is great for family get-togethers because you can throw leftover veggies and meat into it. Add in some maple syrup and voila – it’s the perfect good-for-you easy to make family favourite.

Ingredients

  • 300 grams rice noodles (approximately 3 cups cooked)
  • 3 green onions or scallions, chopped
  • 1 can coconut milk (can be low or full fat) 400 ml or 1 3/4 cups
  • 2 tbsp grated ginger
  • 2 cloves garlic, minced
  • 3 tbsp tamari or soy sauce
  • 1 tbsp lemon juice
  • 2 tbsp Sweet Ontario maple syrup
  • 1/2 tsp chili powder
  • 3/4 cup water
  • Meat of your choice (cubed chicken, sliced sausage, whatever you have on hand)

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the green onions/scallions, chop up any vegetables (red pepper, broccoli, carrots, mushrooms, whatever you have in your fridge!).
  3. In a large baking tray, place the noodles and veggies.
  4. Pour over top the coconut milk, tamari or soy sauce, lemon juice, garlic, ginger, chili powder, and maple syrup. 
  5. Stir/toss to make sure the noodles are coated in the sauce.
  6. Place the tray in the oven and bake for 12 minutes, then stir and replace in the oven for an additional 10-15 minutes or until the noodles are completely cooked.
  7. Garnish with more green onions or sesame seeds.
