If you’re looking for a quick and easy meal that won’t make a mess in the kitchen, this is the one for you! This noodle bowl is great for family get-togethers because you can throw leftover veggies and meat into it. Add in some maple syrup and voila – it’s the perfect good-for-you easy to make family favourite.
Ingredients
- 300 grams rice noodles (approximately 3 cups cooked)
- 3 green onions or scallions, chopped
- 1 can coconut milk (can be low or full fat) 400 ml or 1 3/4 cups
- 2 tbsp grated ginger
- 2 cloves garlic, minced
- 3 tbsp tamari or soy sauce
- 1 tbsp lemon juice
- 2 tbsp Sweet Ontario maple syrup
- 1/2 tsp chili powder
- 3/4 cup water
- Meat of your choice (cubed chicken, sliced sausage, whatever you have on hand)
Directions
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the green onions/scallions, chop up any vegetables (red pepper, broccoli, carrots, mushrooms, whatever you have in your fridge!).
- In a large baking tray, place the noodles and veggies.
- Pour over top the coconut milk, tamari or soy sauce, lemon juice, garlic, ginger, chili powder, and maple syrup.
- Stir/toss to make sure the noodles are coated in the sauce.
- Place the tray in the oven and bake for 12 minutes, then stir and replace in the oven for an additional 10-15 minutes or until the noodles are completely cooked.
- Garnish with more green onions or sesame seeds.
